Basil is known as the king of herbs. It features in the cuisines of Italy, southern France, Spain, Greece, North Africa and the Middle East. It is especially good in tomato, egg, mushroom, and pasta dishes. It is a subtle ingredient in pizza and a dominant one in pesto.
